Growing up in rural Vermont I learned at an early age the importance of local, seasonal ingredients. My mother and father lived on a 30-acre plot of land with an acre of garden that we would sow every spring and from which we would harvest vegetables throughout the summer. My mother would take me foraging for wild fiddleheads and mushrooms and we would return home to craft something uniquely Vermont and special. I look back on those days with great happiness and wherever I travel in the world, I’m constantly reminded of the changing seasons and their effect on the food we harvest and cook. I hope this book portrays the passion and excellence we at the London Club cherish so much and, through these recipes, brings your family and friends together at the dinner table for memories that will last a lifetime.

It was the rivers – the Grand, the Speed and the Nith – that prompted the first settlers to stop in what would become Waterloo Region and it is those waters that still unite the region. While they remain a vital part of the agricultural, industrial and urban areas that flourished around them, they serve another equally important function: The tranquility of the water and the trails, parklands and wildlife that surround it offer refreshment for the spirit. The landmarks of my early life are almost entirely rooted in Waterloo Region, so it is a great honour to reflect on those landmarks through the beautiful photographs of Richard Bain – powerful in their simplicity and meaningful in the memories they evoke.
